Tasty Thursday: Crunchy Peanut Butter Mix

Leave it to Pinterest to spur me into action to make something sweet and sinful.

Wait, let me back up.

As a pastry chef, I make sweet, sinful stuff all day long.  But I almost never have it around the house (and, if I do, Hubby makes quick work of it!).  Two weekends ago, however, I found this pin for Crunchy Peanut Butter Mix and just *had* to make it for our movie night on Saturday.  In fact, it took all of 5 minutes to find the pin, repin it, tell Hubby about it, and for him to get in the car and make a special trip to the grocery store for the ingredients.  We were MOTIVATED.

After he got home, he laughed because he felt so guilty checking out at the store.  Normally, he gloats his way through the checkout line, feeling good about his basket full of fruit, veggies, milk and mostly-unprocessed foods.  This time, he had armfuls of sugary cereal, candy and pretzels.  Oh well, we all have our moments.

This snack mix is like a chex mix…On crack.  Injected with steroids.  Then heavily dusted with powdered sugar.  My sweet-tooth hubby actually thought it was way too sweet.  I, on the other hand, have been secretly polishing it off over the last two weeks.  Don’t get me wrong, a mixture of Golden Grahams, Cocoa Puffs, Reeses Pieces, white chocolate and sugar is REALLY sweet.  But I find that just a few bites satisfies any craving for sweet (and, yum, those sweet-salty pretzels mixed in) without having to eat a ton of junk.  I wouldn’t jump at the chance to make this again, simply because it’s one of those once-in-a-while kinds of goodies; and maybe next time I’ll cut the powdered sugar in half.  But it did make for a yummy movie treat…with a large glass of water to wash it all down!

Crunchy Peanut Butter Mix

4 cups Golden Grahams cereal

2 cups Cocoa Puffs cereal

2 cups thin pretzel sticks (2 1/4 inch)

1 cup candy-coated peanut butter candies

1 cup dry-roasted peanuts

10 oz. white chocolate baking bars or squares, chopped (we used white chocolate chips, but needed to add vegetable oil to thin it out as it melted)

2 Tbsp. butter or margarine

1/2 cup powdered sugar (although next time I will cut this amount in half)


In large bowl, mix cereal, pretzels, candies, and peanuts.  Set aside.

In a microwaveable bowl, melt white chocolate and butter for one minute, stirring until melted.  Chocolate will seize up if it gets too hot, so be cautious especially depending on the setting of your microwave.  Pour melted chocolate over cereal mixture.

In a large, resealable plastic bag, mix half of the cereal mixture with 1/4 cup of the sugar.  Toss to evenly coat.  Pour onto a sheet pan to cool.  Repeat with remaining cereal mixture and sugar.  Store tightly covered at room temperature.
